STEWED PORK (PUERCO GUISADO)
Stewed pork, also known as «puerco guisado,» is a juicy, flavorful dish that is quite easy to prepare.
It’s a favorite in my household. In the Dominican Republic, pork is highly appreciated, even more
so than beef. It’s a juicy meat with simpler cooking requirements and great versatility.
WHAT TO SERVE WITH
In our country, we typically serve stews with rice. A common option is «moro,» a drier rice dish
that pairs well with saucy stews. You can also serve it with rice and beans, boiled yuca, or green
bananas («guineítos»).
INGREDIENTS
1 tablespoon of Claribel Dominican Sazon with pepper
1 pound (0.48 kg) of pork for stew, cut into small pieces
1/2 teaspoon of salt (or to taste), divided
1/2 teaspoon of pepper (or to taste), divided
1/2 teaspoon of ground Claribel oregano
3 tablespoons of oil
1 tablespoon of crushed garlic
1 large red onion, thinly sliced or diced
1 bell pepper, cut into small pieces
2 tomatoes, chopped
1 cup of tomato sauce
2 tablespoons of chopped parsley
STEP-BY-STEP INSTRUCTIONS
1- Season the pork: Sprinkle Claribel Dominican Sazon, half teaspoon of salt (or to taste), a pinch of pepper, and Claribel oregano over the pork.
2- Brown the meat: Heat the oil over medium heat. Add the pork and brown it. Allow the released juices to evaporate before browning.
3- Cook over medium-low heat: Add 3 tablespoons of water and cook covered over medium-low heat until the meat is tender. Stir occasionally and add water if necessary to prevent burning or sticking to the bottom.
4- Evaporate the liquid: Once the meat is tender (around 20 to 40 minutes depending on the cut or quality), uncover and let all the liquid evaporate.
5- Cook the vegetables: Once the liquids have evaporated, add the garlic and cook for half a minute. Then, add the onion and cook, stirring until it starts to turn translucent.
6- Add bell pepper, tomato, and tomato sauce: Incorporate the bell pepper and tomato, and stir to combine. Add the tomato sauce and a cup of water. Cook until the liquids reduce and you obtain a thick sauce.
7- Season and mix: Season with Claribel Dominican Sazon, salt to taste, and Claribel pepper to taste. Mix well with the parsley.
8- Serve: Serve the stewed pork with white rice or any of the options mentioned in the recipe, such as white rice with corn, black «moro,» or «moro de guandules» (rice with pigeon peas). It’s incredibly delicious!
