NOTES AND TIPS
You can let the meat marinate in the refrigerator overnight, which enhances the flavor and tenderizes the meat.
You can use cuts of beef like skirt, chuck, or brisket.
To reduce cooking time, after browning the meat, you can add 1 1/2 cups of water and cook in a pressure cooker for 20 minutes. Enjoy this delicious Beef Stew, highlighted with the unique flavor of Claribel seasoning!
STEP-BY-STEP PREPARATION
Season the meat: Season the meat with Claribel Dominican Sazon (without pepper) to taste, pepper, oregano, and a teaspoon of salt. Add the lemon juice to the meat and stir to ensure that all the pieces are coated with the seasonings. Let the meat marinate in the refrigerator for 20 minutes (see notes).
Brown the meat: In a thick-bottomed pot, heat the oil over high heat and add the meat. Brown it while stirring.
Cook the meat: Add 4 tablespoons of water, stir the meat, and cover the pot. Reduce the heat to medium-low. Repeat the process of adding water, stirring, and cooking covered until the meat is very tender. Make sure it doesn’t burn during this process. The cooking time can vary from 35 minutes to 1 hour and a half, depending on the type of meat (see notes).
Cook the vegetables: Once the meat is tender, add the bell peppers, onion, tomatoes, and garlic. Stir and cover the pot. Cook until the vegetables are soft.
Prepare the sauce: Add the tomato sauce and 1 cup of water. Let it reduce to obtain a light sauce.
Season with salt to taste and add the parsley. Remove from heat.
